Salmon courgette pasta

Portion: 2

  • Zucchini pasta (100-200g)
  • 200 gram fresh salmon steak or sliced smoked salmon
  • 1/4 cup Liquid Gold
  • 1 tbsp Lemon juice
  • Small handful of fresh dill
  • ½ cup cherry tomatoes
  • 1 red onion finely chopped



  • 1 tbsp lemon
  • 1/4 cup Liquid Gold
  • 2 tbsp mustard (good quality - check ingredients)
  • 4 tbsp olive oil



  1. Chop the tomato and onion
  2. Lightly pan fry the onion in coconut oil until fragrant and glassy.
  3. Add Liquid Gold to the pan and simmer for 2 minutes
  4. Add the zucchini and tomato and leave for around 5 minutes.



  1. For oven baked salmon, wrap loosely in tin foil, sprinkle with salt and lemon juice, and lightly bake in 180 degree oven for around 10 minutes or until cooked.
  2. For sliced smoked salmon, remove from packet and cut into small pieces.



In a small bowl combine lemon juice, Liquid Gold, olive oil and mustard and mix together



Place pasta into a shallow bowl with vegetables and salmond and drizzle the dressing on top.
